&#60;p&#62;I know, I keep on eating cake! My sister was disappointed that I wasn't planning on writing her (that is, my LO's ;)) name on it.  Not sure how I'm decorating it yet, but I don't want the traditional &#34;happy birthday&#34;.  Maybe sprinkles in the shape of a &#34;1&#34;?&#60;/p&#62;

<description>&#60;p&#62;So, the verdict!  I'll try to post a pic tonight if I remember.  The cake turned out well, but was pretty dense - think more like pound cake.  It was good, but not sure if that's the right choice for a first birthday cake.  &#60;/p&#62;
&#60;p&#62;I purposefully refrigerated the cake (with icing!) and then left it out on the counter to come back to room temp.  I don't think this contributed to the texture, but I'm also not a baker lol.  The icing survived being in the fridge for three days and still tasted great.&#60;/p&#62;
&#60;p&#62;I may give in and just do a box mix (hello Betty Crocker super moist!) with the whipped cream frosting.  May try Trader Joe's mix next?

It was delicious and I thought held up a bit better that dairy whipped cream. I just added vanilla and a touch of sugar.  LO had never had any sweets before so she was very pleased :-D
