<description>&#60;p&#62;I bake mine at 425 with evoo, garlic salt. It's not crispy like deep fry but it's crisp on the outside. I let it go for about 40 minutes.

<description>&#60;p&#62;I read a trick online somewhere to dust fries with cornstarch first. Mine are pretty crispy now! I put them in a Ziploc, pour in cornstarch and shake like crazy, then add olive oil and seasoning and shake again. Then spread out in the pan, no two touching - use two pans if you have to- then bake! Crispy as I've ever had without frying.&#60;/p&#62;
&#60;p&#62;ETA I've also used a pan searing type flour when I was out of cornstarch and it worked similarly.

<description>&#60;p&#62;I have found that apart from deep frying the most important thing is to get oil everywhere. So, I put the fries and the oil in a tupperware or something and shake them. This helps.

<description>&#60;p&#62;I really think the only way to do it is to deep fry them...I think there is a method where you fry them twice...but this defeats sweet potato fries in my mind (a healthier option).&#60;/p&#62;
&#60;p&#62;I do like to preheat my cookie sheet in the oven, get it really hot, then I put the fries on that.
