<description>&#60;p&#62;I've done the turkey at least 5 times, but never brined. I just keep it simple and it works. The 'special' touch is including a few apple or orange pieces inside, rosemary on the outside along with the usual spices for some extra flavor. My tip is insert the thermometer near the leg joint but not touching a bone.

<description>&#60;p&#62;I am!  This is the 6th Thanksgiving I've done, and the 6th Thanksgiving that I've used Alton Brown's brining recipe. Works like a charm!  Important tip is to make sure you really rinse the bird before you put it in the oven... The leftover brine can make the turkey way too salty. &#60;/p&#62;
&#60;p&#62;This is, however, the first time I'll be cooking the turkey in an oven roaster. Thought I'd give it a try to free up my actual oven for the side dishes.

<description>&#60;p&#62;This is the second year my mom and I are doing it together! It turned out SO GOOD last year, that I'm actually more nervous this year. I think it was a fluke.&#60;/p&#62;
&#60;p&#62;We don't brine. We put herb butter under the skin, then just fill the pan with broth, apples, garlic, onions, celery, and herbs. We cook 4-5 hours and baste through-out. Pretty easy!

And I did see that setting off the fire alarm is a common problem, so part of my Thanksgiving prep has been scrubbing out my gross oven and giving my oven racks an overnight Dawn bath (literally in the bathtub). <description>&#60;p&#62;@keepcalmcarrie:  I said that for Mr. Bee's bird because his is a smaller bird less than 10 pounds.  It's also based on the Alton Brown's recipe (says to brine between 8-16 hrs for a 14-16 lb turkey), and after reading the subsequent reviews!  You can always take it out of the brine earlier and just leave it in the fridge until you're ready to roast.  Don't worry!  &#60;/p&#62;

I read some reviews on that recipe saying that it was even better brined longer - and because I didn't want to rotate it at 4 AM, I put it in the brine around 1:30, planned to rotate it right before I go to bed between 11-midnight, and planned to take it out of the brine at 11 tomorrow morning. So nearly 22 hours of brining... now I'm nervous. Please tell me I don't really have to rinse it at 5:30 AM... ;)
