&#60;p&#62;Basically, the advice is to slow cool it (room temp first, then chill) and drink immediately. Heat accelerates the aging process, so the wine isn't good for long-term storage (i.e. until the first bonus), so chill it and try it and let us know?

<description>&#60;p&#62;So im not a champagne drinker, but we found a super old bottle of champagne at my grandparents house a few years ago in a Florida apartment that had had mold issues from a time when the ac was off for a long time. DH tasted the champagne and tossed it but he said it wasnt terrible,  it was basically just flat. So...who knows?  I'd probably get another bottle for the occasion but try that bottle out together anyway :)

I already gave him this bottle when he first got the job and made this whole speech about how we will save it for his first bonus. So if it is very likely to be just horrible, I might as well just get a replacement bottle and preserve the gesture. If it's just going to be, like, not quite as good but drinkable, then I think I'll get away with it. ;)

But I definitely wouldn't toss without opening and trying. I would consider consuming now rather than waiting a year, though.

Thus, why I just discovered a nice bottle of champagne under the seat of my car. :( It has been in there for close to a week and it has been scorching out. My car has been sitting in my parents' driveway and it is black on black. So, the champagne has basically boiled.&#60;/p&#62;
&#60;p&#62;I bought this bottle for my DH to celebrate his new job. I actually got two - one to toast the new job (already drank it) and this one to save to toast his first bonus we are anticipating later this year. (It was kind of a &#34;Go get 'em/I believe in you&#34; gesture.) So... Should I toss this (fairly expensive) bottle and replace it? Or should we just keep it since it will mostly be a ceremonial toast anyway?
