We tend to eat either healthy/ homemade "Lunchables" with lunch meat slices and cheese, hummus plates, or pb&j regardless of what day it is. I give DD fruit and some raw veggies. Sometimes we have dinner leftovers if we have some. I almost never make a new hot lunch. You work hard all week- relax and enjoy your weekend! I usually throw those quick options into our cooler with some granola bars and goldfish for snacks and water bottles so we aren't tempted to eat out since most of that won't get gross if it sits in the car while we enjoy our summer. DH and I can usually pack lunch in like 15 minutes.

@Rocker2014: this.

We do have big breakfasts and dinners on the weekends, but ziplock bags of lunch meat, cheese, easy fruits or veggies and a carb are carted around with us on the weekends and generally enjoyed by us all.

We do mostly "deconstructed sandwiches" on the weekend - cold cuts, cheese, a bread product, tomato, lettuce and a pickle, sometimes with chips.

We also do lots of omlettes, or egg scrambles.

I really like soup on the weekends. We keep udon noodles, broth, frozen shrimp and veggies on hand. I also like condensed tomato soup with store bought croutons.

We generally meal plan in such a way that I make an extra big batch of 2 of our meals during the week so that I have some leftovers for 2 meals on the weekend. Usually I will cook a bigger batch of whatever we're eating Tuesday or Wednesday and then pull it out again for dinner on Saturdays and lunch after church on Sundays. We usually make some big pasta dish or a curry dish once a week so its just a matter of reheating or pouring curry over some rice I have on standby in the rice cooker.

For adults, we also always have stuff for sandwiches and entree salads (salad greens, dressing, croutons, and a rotisserie chicken or some cold cuts to make a chef's salad) and that makes fast meals for us.

We also always have stuff to make a quick Lunchable type spread for the kids. I keep turkey pepperoni, Canadian bacon, and string cheese in the house at all times, along with crackers, pretzels, or saltines. I can throw those on a plate with carrot sticks, fresh fruit or a pouch of some kind, and milk and its a fine meal. It also carries nicely if we're eating at a park or even if we eat out at a restaurant and don't want to buy the kids meals.

We always have baby carrots, snap peas, Persian cucumbers, and some other kind of fresh fruit in our house so that I have very easy fast sides to augment the kids meals.

Our weekend lunches are always easy and not elaborate at all. We do Lipton noodle soup with cheese & crackers, KD and hot dogs, grilled cheese or leftovers. I usually make one big dinner on the weekend and then go to one of our mom's houses for the other dinner. I don't want to spend a lot of time prepping big lunches especially now that the weather is getting nicer.

@LadyDi: @wrkbrk: I would have done the brunch/dinner only before kids, but my 2 and 4 year olds wake up around 6 am and need breakfast early, then we are usually out of the house by 9'am doing various activities. Summer won't have those activities though, so we might be able to satisfy them briefly with cheerios, then a later bigger brunch.

Our nanny makes a big batch of soup at the end of the week and DD has that as her lunch on weekends. Sometimes we go out for brunch/lunch. Other times we do a mezze spread (cheeses, hummus, veggies, etc). We just try to simplify things on the weekends.

Ha, I feel your plight! I think I get all planned out from the week that it doesn't even occur to me to plan something for weekend lunches. Sometimes I'll go to the grocery store Sat am, come home and realize we have nothing to eat for lunch. :silly:

When we do have something to eat it is basically either leftovers or quesadillas. I guess maybe having sandwich stuff available would be good? We don't really eat sandwiches during the week so that would work for us.

haha, is this a problem?? We pretty much just have chicken nuggets, sandwiches, or left-overs for lunch on Saturday, and then Sunday we always get take-out after I go grocery shopping! Easy and no one complains. :D

@danda: We only do two meals on Saturdays and Sundays - a big brunch and an early dinner. We defaulted to this always but now, with a kid, it really does make it easier to remove two meal preps from the weekend entirely!

We do a pretty good job of planning dinner, but our weekend lunches are a mess! Over half the time we end up eating out because we don't want to put the effort into cooking after a busy morning. Any recommended lunches? Our default at home lunches are chicken fingers (we keep a stash in the freezer), grilled cheese, or quesadillas.
