I love Donna Hay’s recipe - I make her bolognese sauce for pasta all the time, and have made her lasagne a couple times (it uses her bolognese sauce, which is simple to make, but you could use canned sauce too). So good.

https://www.donnahay.com.au/recipes/onepot/pasta-rice/lasagne

I havent tried PW's version - but I generally have loved everything of hers. So I'll be giving that a try.

We do a no boil recipe, my mom says the recipe came from the Muellers box at one point:

1 box lasagna
2 Jars sauce (or homemade)
1.5 lbs meat (I use a mix of sausage and g beef)
15 oz Ricotta
1-2 Eggs
1 C parm
2 Cup Mozz

Meat gets browned and mixed with sauce. Ricotta, Egg, Parm and spices you want (parsley is on the recipe but we dont like it and therefore omit) get mixed together.

Layer as follows:

Small bit of meat/sauce.
Noodles
Half Ricotta Mixture
1/3 remaining sauce mixture
Noodles
Remaining Ricotta
half the remaining sauce
Noodles
Remaining Sauce

Bake at 350 covered in foil for 1hr - remove foil and sprinkle with Mozz, bake for 15 mins longer.

Super easy.

BUT I don't make my own pasta sheets, and you can substitute store-bought sauce for homemade. So basically, it's multilayer lasagna with bechamel and meat sauce.

@petitenoisette: I adore ricotta, I often eat it with fetuccini, instead of tomato sauce...but I do not care for it in my lasagna! I like it in stuffed shells or manicotti, truth be told.

I am VERY picky when it comes to pasta. It's really the only thing I am picky about.

I've also done a seafood lasagna, it goes wonderfully with the béchamel sauce.

@looch: I think the Smitten kitchen recipe is basically a more in depth tutorial of Marcella Hazan's. It is SO good, I will never make a ricotta lasagna again:

I don't generally make the pasta (but I have done that before and if you have the time/tools it is amazing) and I often just use jarred sauce/meatless. But béchamel instead of ricotta is AMAZING and everyone loves it.

Um, I don't know if its amazing, but the EASIEST one we make that every guest who's ever had has loved is a ravioli lasagna. The best part is that the kids can help make it.

Basically, you buy a giant bag of frozen ravioli (we like spinach ones), layer a big tin lasagna pan with your favorite marinara (thinned 2 parts sauce with 1 part water), Parm, and mozzarella. You can also add in crumbled Italian sausage, ground beef, more spinach, artichokes, you name it. Layer it all and it saves the step of making the ricotta filling and its less overwelming in the final product. Cover with cheese, cover tightly with foil, bake for an hour at 350F, and then remove foil to brown cheese. Let it sit for 10-15 minutes, then serve.

My friend loved this so much he devised a recipe that uses a pesto cream sauce and chopped rotisserie chicken that is divine.

This is what I grew up eating...except my mom makes her own pasta. I personally like the flat noodles, and I do cook them in advance, even if they are no boil.
