@Mae: Not sure where you are but they definitely sell Octoberfest in New England as a single along with Stella Artois (another beer that tastes great in the dip).

@MrsKoala: I'll look for that! But mostly I'm hoping I can find one at the grocery store that is sold as a single or something. I can't drink (obviously) and my husband doesn't drink... so a 6 pack would really be useless in our home. lol

@Mae: I hope he likes it!! Try it with a fall beer if you can. Different beers give it a different taste and it's always good no matter what you go with!

ETA: I love the way it tastes with Sam Adams Octoberfest!

A box of cream cheese (1 part), a box of velveeta (2 parts). Microwave until it is all melty. Cook up hamburger meat on the stove. Add hamburger meat and salsa and mix. It can be refrigerated until almost time to use. Warm in the microwave until melty and serve with chips.

Another one:
Can of black beans, Can of Corn, Salsa, Cumin, cilantro served with chips.

@shinymama: haha well there is some history there. I made it once for a girl's night and it was delicious, but we only ate like 1/3 of the pan and i put the rest in the fridge. It made our refrigerator smell SO BAD and the smell wouldn't go away for like a week. he swore he would never eat it again haha.

@Mae: Wow, every guy I know loves that stuff!

I would go with the spinach dip then. I do sour cream, mayo, thawed spinach, green onions, water chestnuts, and the Knor packet. Easy and delish!

If he's willing to forgo the bread, I would consider chips with salsa or guacamole.

My coworker brings in a really addictive dip that is super easy.

1 package knorr veggie soup mix
1 bottle Mrs. Renfro's hot salsa (i'm sure you could use any salsa)
1 container sour cream.

Mix and chill for a few hours! Serve with tortilla chips or veggies.

@Mae:

1cup thawed, frozen chopped spinach
1.5 cup artichoke hearts (I buy them whole in a jar & drain before adding to dip)
6oz cream cheese, softened
1/4c sour cream
1/4c mayonnaise
1/3c Parmesan cheese
1/2tsp red pepper flakes
1/4tsp salt
1/4tsp garlic powder

I cook Frozen spinach per directions then drain all juice. Once drained, I put them back in the same pot & add all other ingredients and mix. I cook on medium high & stir occasionally. Serve hot.

We've tried it with frozen artichoke but it isn't nearly as good!

Spinach dip is always good. We use the Knor vegetable soup packet mix and follow the instructions on the back (i think it's sour cream and cream cheese and spinach...maybe some mayo. Can't remember)

BLT dip is also good (but then you have to cook a lot of bacon)

I like 7 layer dips. but they're a lot of work

Buffalo Chicken Dip. It reheats in the microwave without too much trouble and goes great with chips or celery sticks. http://allrecipes.com/Recipe/Buffalo-Chicken-Dip/Detail.aspx?event8=1&prop24=SR_Title&e11=buffalo%20chicken%20dip&e8=Quick%20Search&event10=1&e7=Home%20Page

ETA: I just noticed you wanted it to go with bread. I think it would be a bit thick for bread but I think it is so good it doesn't really matter what I put it on.

I do a beer dip that is the easiest thing in the world. It's two blocks of cream cheese, one packet of Hidden Valley Ranch seasoning, two cups of shredded cheddar, and about 1/3 cup of beer (any flavor). First, mix the cream cheese and Ranch seasoning. Then add a little bit of beer (1 TB) and half the bag of shredded cheddar. Let it sit in the fridge for an hour and then add a bit more (another TB). Do this so the dip is creamy but not watery. Chill overnight and serve with pretzels.

My husband just emailed me that he is supposed to bring a snack to work tomorrow for his team. He suggested a "yum dip" and bread. I don't make a lot of dips so I'm sort of at a loss.... anyone have any fabulous dip recipes that go well with bread?

Restriction would be that he doesn't have an oven at the office. So the dip has to be either cold, or easily reheated in the microwave.

Thanks!!
