Oh and I always double the sauce, because who doesn't love sauce!?

<description>&#60;p&#62;@HLK208:  when I do that I pour a bit of the enchilada sauce or salsa over the chicken and spring a bit of cheese inside before rolling it up. So it's kinda just a mess of sauce and cheese both inside and outside. It also helps it freeze and stay moist.

<description>&#60;p&#62;@HLK208:  if you like spicy I promise you these chicken enchiladas are to die for...freaking delicious!  I use flour tortillas and I'm sure it would taste just as good without onions. The sauce is what is to die for.  Try it and I'm sure you'll love it!  I just use a rotisserie chicken bc it's easy..and I agree that the chicken seems to absorb the flavor more &#60;/p&#62;

<description>&#60;p&#62;I shred rotisserie chicken - something about the soft shredded chicken meat soaks up the sauce/seasoning a lot better - and then toss the meat with enchilada sauce, canned green chilis if I have some, and a few shots of hot sauce.  Taste for seasoning - flour tortillas suck up a lot of flavor so it could need a little more oomph.  Then top with lots more sauce.

<description>&#60;p&#62;I shred baked chicken, then mix in a pot with melty cream cheese and salsa. I line warmed flour tortillas with a few spinach leaves, then spoon in the chicken filling. Roll and top with sour cream sauce (sour cream mixed with Ranch - it's the Deep South way) :) and sliced jalapenos. Not healthy. Not authentic. Highly delicious.&#60;/p&#62;
&#60;p&#62;I have also used rotisserie chicken mixed with cheese, rolled in corn tortillas, topped with ranchero sauce and cheese, sliced jalapeno, and a fried egg. Slightly more authentic. Not healthier. :)

&#60;p&#62;I cook chicken with evoo, garlic and cumin. Then I shred it, place in flour tortillas, roll, top with enchilada sauce, cheese and olives. They turn out kind of meh, despite how easy they should be! DH doesn't like corn tortillas or onions so I can't use either of those to make them better.&#60;/p&#62;
