I need ideas for an appetizer to make for our church's Easter potluck lunch. Needs to be simple enough to make (i have not been a big cook lately!) and travel well. I'm supposed to make enough for at least 20 people.
Normally i live for apps but I'm drawing a blank!

Someone made this for our baby shower and it was friggin' amazing. I seriously just stood there and shoveled it into my mouth.
■ 2 cups shredded cheddar cheese
■ 1 cup shredded Monterey Jack
■ 2 tbs chipotle peppers in adobo sauce, diced small
■ 1 small can (4oz) diced green chilies, undrained
■ 1/2 cup Mayo
■ 1/4 tsp garlic powder
■ 1 11oz can of corn, drained
■ 1 small tomato
■ 2 tbs cilantro, chopped
■ 2 tbs green onions, sliced thin
2. Preheat oven to 350 degrees.
3. Mix the cheeses, chipotle and green peppers, mayo, garlic powder and corn together.
Pour into an oven safe dish.
4. Bake 20 minutes or until golden brown and bubbly
5. Top with diced tomatoes, green onions, and cilantro. Serve immediately with tortilla chips

No cook or bake...Frozen appetizer pinwheels. Buy enough for each person to have 2 or 3. Remove the app from the package and let defrost on the counter for a half hour or so.

- 5 boneless skinless chicken breasts
- 2ish cups chicken broth
- 1 jar blue cheese (Marie's works well - the kind in your produce section)
- 3 blocks cream cheese (allow to soften to room temp)
- Frank's Red Hot (or other hot sauce of your choice)
- Place chicken in a deep pot and cover with chicken broth. Let boil until fully cooked and it begins shredding
- Remove chicken from pot and shred using a kitchen aid mixer or forks.
- Mix shredded chicken with cream cheese and entire jar of blue cheese. Add hot sauce to taste.
- Place chicken mix in a baking dish and bake at 350 for 45 minutes
Best served with veggies or tortilla chips!

@aprk: It is SO GOOD! It's a huge amount and barely ever any left! I was practically drooling as I typed the recipe because I can't have blue cheese for eight. More. Months. Small price to pay but still...yum.

Trader Joes has those bite size appetizers you can bake. They have a few that are good.... many bake in the plastic tray it comes in and you can just transport it to your location like that and plate when you arrive.

how about something like a 5-layer dip with tortilla chips.. just layer refried beans, sour cream, salsa, guacamole, and shredded cheese. no cooking involved, and cheap too!

I love Texas Caviar for a pot luck. It's easy and the recipe I have makes a lot. It's kind of like a bean salsa.
2 cans black eyed peas
2 cans shoe peg corn
1 small tomato (or larger if you like), diced
Green onion, thinly sliced
Cilantro (just a little) finely chopped
1 package italian dressing mix, prepared according to package instructions
Pour black eyed peas and corn into a colander. Rinse to get rid of any gravy from the peas. Pour mixture into a large bowl. Add other ingredients and mix well. Refrigerate over night and service with tortilla chips (I prefer Tostitos scoops).
-You can use bottled Italian dressing but it doesn't taste as good.
-I usually skip the green onion because I'm not a fan, but you can use as much or as little as you like.
-You don't need very much cilantro at all. A little goes a long way with this!

@Cara M. 17: this is exactly what I was thinking... a lot of the entrees people are bringing are cold (egg salad sandwiches, turkey and swiss sandwiches) so I was thinking something slightly warm would be good. But I might eat it all before I get there!! Thanks!!!

@mrs. wagon: cannot get any simpler: equal parts grape jelly and chili sauce. Let simmer in crock pot, add cocktail meatballs. DELISH sweet n sour meatballs.

mini potato pancakes - grated potato, onion, a little bit of flour and possibly an egg to bind. cook in a bit of oil, serve with apple sauce or sour cream. good hot or cold
