I always just do shredded leftover rotisserie chicken, mayo, lemon juice, black pepper, and finely diced onion and celery. Yum!

I boil chicken breasts with onion, celery, salt & pepper. Discard cooked onion & celery . Cube chicken and marinate (typically overnight) in light coating of Italian dressing. Add mayo, finely diced celery, grapes sliced in half, and my grandmother added pecans but I do not.

No real recipe as I just do it to taste; but my favorite chicken salad variations are:
With tarragon, sliced grapes, little bit of red onion, mayo and walnuts.
With mayo, curry, raisins and topped with avocado

Craisins, mayo, Lawry's seasoning salt, cracked pepper, celery, and onions.
Craisins can be substituted for raisins or dried cherries.

This post inspired me as I had leftover rotisseriechicken in the fridge I did it with green onion, walnuts, dried cranberries, mayo, curry, lemon juice and salt and pepper. Yum!

I like to make min with chicken, grape or apples, something for crunch, mayo with Dijon mustard and curry powder.

@Mrs. Chocolate: this chicken salad is so good and so easy. Everyone asks for the recipe when I make it. It's a Sonoma style chicken salad. My DH loves to eat it with crackers. I serve it with mini croissants
Easy Chicken Salad
2-3 cups shredded chicken (I use a whole already baked chicken from the store)
1-2 cup halved red grapes (I use craisins)
1-2 cup chopped celery
1-1.5 cup chopped cashews
1 cup Mayo
1 Tbsp. sugar

I do shredded chicken, grated apple, a bit of mashed banana, golden raisins, curry powder, tumeric powder, mayo.
I also do shredded chicken, chopped celery, cucumber, diced tomato, olive oil and balsamic vinegar, salt/pepper.
