My kids favorite is bbq chicken in the crock pot. Just throw the chicken breasts add about half a bottle of your favorite bbq sauce and add about 1/4 bottle Italian dressing. Cook on high 4 hours or low 6 hours. About an hour before it's done I'll use two forks to shred the chicken. I serve it with slider rolls and coleslaw.

Cut it into strips, dredge in ranch dressing and then panko - bake in oven or fry in oil on the stove

@regberadaisy: Same here. We eat it at least twice a week. It can get a little blah without new recipes.
@Espion: That looks great, but DH isn't a big fan of Indian flavors.

TACOS! I like to cook it in salsa, add stuff (corn, peppers, onions, whatever...) then shred the chicken and put on tortillas with more stuff (lettuce, cheese, sour cream, olives, etc)

italian chicken bake. Italian dressing (I like homemade with balsamic), carrots, sweet potato (or regular potato), italian seasoning, Parmesan cheese. Bake until soft. This is also a great crockpot meal if you have the time.

This morning I put frozen chicken breasts, frozen corn, salsa, onions, and taco seasoning in my crock pot. Now the chicken is all shredded, and we'll eat it with lettuce and hot peppers and cheese and such over tostada shells.

I buy 40 lbs. of chicken at a time and stock our freezer, so it's always around for mealtime in this house! Our favorites:

@sarac: when you put frozen chicken breast in the crockpot how long do you cook it for? And is it boneless ? I did it once and it was so dried out even though there was liquid.

@regberadaisy: just . . . all day? I usually have extra liquid, but you could just add some. I put in extra if I'm putting in dried beans.
