quesadillas, pastas, make mashed potatoes and veggie sides and have with gravy, soup - we get one at least once a month!

I always cut some up & make chicken salad sandwiches for lunch. You could also make a couple chicken pot pies---super easy to freeze & makes a easy dinner, especially in winter!

I love making BBQ pizza with chicken, red onion, cilantro, and BBQ sauce instead of red sauce!
Or making a grilled cheese sandwich with sliced breast. Or a "salad wrap", (which for me is basically a salad that I eat inside a wrap).
Breast also freezes really well. I love making a big batch and then freezing them for the week for quick lunches and dinners.

The meat is already very seasoned and flavorful so I just toss it into a dish to warm up and not get tough.
We like chopping it up and putting on lunch salads. Chicken fried rice. We sauté zucchini until soft and toss with tomato sauce and chicken with pasta - one of DH's faves. Enchiladas, chicken soup, chicken salad, chicken and dumplings, lettuce wraps by toss the chopped chicken with hoisin sauce and water chestnuts in the skillet. Chicken Caesar wraps. Pesto pasta with chicken.

The Costco rotisserie chicken is my favorite. We get it every week because it has so much flavor.
We usually just heat it up and eat it alongside roasted veggies: carrots, celery, potatoes and sometimes beets.
I also added a chicken stir fry to the list this week and will use the rotisserie chicken for that, served with rice.

Toasted brioche buns with fillings of your choice. I like to have lettuce, cheese, pickle relish, mustard, hot sauces. Make your own dinner night.

Tacos, Chili, chicken noodle soup, chicken salad, and my favorite- chicken taco bake (heat the shredded chicken in enchilada sauce, sprinkle cheese on top and bake, serve with chips and sour cream, great for football parties!)
