I also made this recently and it was pretty good: http://www.101cookbooks.com/archives/coconut-red-lentil-soup-recipe.html i thought it lacked a bit of heat, and found that adding some sriracha made it pretty delicious.
I find that Pinch of Yum and 101 Cookbooks have some great vegetarian recipes.

curry (I make with store-bought curry paste w/lots of veg and potatoes to give a little more heft. The pics on this recipe are terrible but I think it's delicious!)

We like falafel with veggies and pita. Bean tacos/quesadillas/enchiladas. Eggs baked in spicy marinara sauce and served over sautéed spinach with a baguette.

My meat-loving husband didn't even complain about the meal seeming incomplete. I think it's because the chickpeas add some protein.
I also make curry with sweet potatoes and chickpeas that's pretty filling.

This is my fave! I pair it with quinoa and it's GF and vegan. Because it's all veg it's not always popular with toddlers. I love to slow-roast the tomatoes for a couple hours and make a triple batch and eat it all week.
I also make a lentil chili that's pretty great.

Also, a good salad recipe just because we all need one:
Romaine lettuce, shaved Parrano cheese, thin sliced firm apple like pink lady or Braeburn, toasted walnuts, croutons, and a homemade dressing of olive oil, Dijon, apple cider vinegar, salt and pepper, and a pinch of sugar. It's magical and crunchy and fresh and substantial.

@Mrs. Lion: I love websites and cookbooks rather than blogs, which can be hit or miss in their recipes.
I've had great luck with the recipe databases at Vegetarian Times and Whole Foods.
