This weekend I made a giant batch of cookies in my Kitchenaid mixer. This dough and the cookies freeze really well so I always save a lot for later!

I really modified a traditional monster cookie recipe which already has a lot of oatmeal but tried to add the benefits of a lactation cookie such as brewers yeast and flax. They taste really good. You can mix in any type of toppings including, nuts, chocolate chips, M&Ms, coconut, etc.

2 sticks (1 cup) of unsalted butter
3 cups of creamy peanut butter
1 cup white sugar
1 cup brown sugar
4 eggs
Flax seed and brewers yeast (didn't measure just kinda dumped a few tbsp of each in)
vanilla
10 cups of oatmeal (not instant)
Raisins and Cranberries

I dropped these about a heaping teaspoon into my mini muffin pans and baked on 350 until just golden (they harden when the come out).
