Mmmm I love bruchetta, luckily DH loves it too :)
Mine is almost always meatloaf or chinese, he doesn't like either. It freaks him out to have a "loaf of meat" :)

DH is gone tonight and I just realized I'll have dinner alone...am debating whether to consume leftovers like I should or go get something delicious! Bruschetta sounds great, but so does breakfast for dinner...so do a plethora of things dipped in Nutella. ;)

My DH has been travelling more than he used to, and with two kiddos to deal with, I have determined that I need to strike a balance of easy-delicious-quick. So lots of baked chicken breasts with steamed veggies, etc. Easy, peasy. Oh, and then I like to use the leftovers in quesadillas loaded with veggies!

DH works offshore and I've been eating paleo lately so I'll usually just steam a veggie and bake or broil a meat. Tonight is grass-fed steak and spinach&mushrooms I sautéed quick in olive oil!
Before paleo, I wouldn't cook bc I'm solo parenting, but the steamer and the broil button have made cooking super easy since I've had to do it for paleo:). I'm pretty proud of myself, solo tending to H and cooking myself 3 meals a day!
