DH is away on a business trip and bruschetta is always my go-to meal when I'm solo (the man hates tomatoes). I miss him, but supper is sooooo good tonight!

I always just make easy things for myself like mac n cheese or a frozen pizza.

Mmmm I love bruchetta, luckily DH loves it too :)
Mine is almost always meatloaf or chinese, he doesn't like either. It freaks him out to have a "loaf of meat" :)

I usually cook the same things when he's gone. I like that I end up with leftovers for the next day for me & DS.

Grilled cheese and tomato soup, frozen pizza, kraft mac and cheese. Cereal.

DH is gone tonight and I just realized I'll have dinner alone...am debating whether to consume leftovers like I should or go get something delicious! Bruschetta sounds great, but so does breakfast for dinner...so do a plethora of things dipped in Nutella. ;)

Used to just do cereal, but now that lo is here probably grilled cheese or black beans and rice.

Leftovers from the freezer, soup, sandwiches, quesdilla, pasta with olive oil, Lean Cruisine, salad.

DH had a meeting tonight so I was solo. I made a toasted cheese and tomato sandwich and tomato soup!!

My DH has been travelling more than he used to, and with two kiddos to deal with, I have determined that I need to strike a balance of easy-delicious-quick. So lots of baked chicken breasts with steamed veggies, etc. Easy, peasy. Oh, and then I like to use the leftovers in quesadillas loaded with veggies!

DH works offshore and I've been eating paleo lately so I'll usually just steam a veggie and bake or broil a meat. Tonight is grass-fed steak and spinach&mushrooms I sautéed quick in olive oil!
Before paleo, I wouldn't cook bc I'm solo parenting, but the steamer and the broil button have made cooking super easy since I've had to do it for paleo:). I'm pretty proud of myself, solo tending to H and cooking myself 3 meals a day!

I've had broccoli with dip and a cheese tortilla tonight. I baked chicken but have no desire to eat it ...

Usually the same as when he's here. LO needs dinner too now so I either make less, or just freeze the leftovers.
