Boca veg chicken patty sandwiches for us, baked Japanese sweet potato for LO (he tries, but can't eat big amounts of sandwiches yet), home fries, salad, roasted asparagus, and fruit as sides.

I'm feeling in a Thanksgiving mood so am making sausage apple stuffing with cranberry sauce, roasted asparagus and a salad.

Leftovers tonight. The options are pork chops, roasted chicken, Mac and cheese, roasted veg, and sauté green beans.
Any ideas to quickly transform some of this into something else?? I'm wondering if I can quickly shred the chicken and make a quick chicken pot pie base and serve over egg noodles?? -

this is what I use! it's heavy but delicious. I serve it over egg noodles cooked in beef broth.

@gingerbebe: DH comes hoe tonight after 9 days away, so I ordered pizza for DD and me, and him a donair, which is currently in the slow cooker on warm to keep it warm until he gets home in 3 hours. This is my new hack I invented tonight, fingers crossed it works!

It's cold and rainy here so I did grilled cheese and tomato soup. It was perfect!

@fancyfunction: we did a "bootleg Thanksgiving" one pot over the weekend with a box of Stove Top made with celery and onions into which we threw chunks of rotisserie chicken meat and a can of corn while it all steamed together. Would have added gravy buttt I didn't have any. Still good!
