I have chicken in the fridge for dinner and want to make a quick casserole when I get home. Suggestions?

Loaded baked potato and buffalo chicken

8oz uncooked Rigatoni
1T Olive Oil
1C finely chopped onion
1(10oz) pkg Frozen chopped spinach, thawed
3C cooked chopped chicken
1(14.5oz) can Italian Style Diced Tomatoes
8oz Chive and onion cream cheese (I use a cheese spread)
1/2 t salt
1/2 t pepper
1 1/2 C - shredded mozzarellaCook pasta and drain. Saute onions in olive oil until soft. Drain thawed spinach. Stir everything together but mozzarella cheese. Put in greased 11x7 (I used 9x13) baking pan. Top with shredded mozzarella and cover dish. Bake for 30 mins at 375, then uncover and bake for 15 mins.

@blackbird: have you made that? I was just searching Pinterest, saw that one and saw some negative reviews on a couple of the pins. It looked darn good, though...

I used to make one that was easy and yummy. Chicken, cream of mushroom/cream of chicken soup, broccoli and a package of stuffing mix. It was like thanksgiving!

What were the negative reviews? I mean, it's diced chicken, roasted potatoes, bacon, cheese, buffalo sauce, and green onions! We really really liked it when I made it!
