Help! I have a quarter beef in the freezer and a desperate need to do more crockpot/weekend prep/freezer meals.

I've cooked a bunch of taco meat up and frozen it--I throw this in a skillet with some water and voila--tacos. My other go-to is french dips: throw a roast and a packet of french onion soup mix in the crockpot with some water and cook until tender.
