I get requests for my spinach and artichoke dip all of the time. It's super easy but I have to admit, it's pretty tasty.

I don't cook so I'll put DH; he makes his own roast pork and people go nuts for it. He also does this spicy cucumber app that is very easy to make and people love it!

@autumnlove: I don't even really have a recipe! I guess it is a recipe... it's just assembling it and baking it! The secret is canned chili!
2 family size bags tortilla chips (I like to use plain tostitos)
2 cans Hormel chili, no beans
Shredded cheese (I usually use a mexican blend)
1 can refried beans
Guacamole (you can make your own but I usually just buy the wholly guacamole stuff)
Salsa or pico de gallo (again, I usually buy it)
Sour Cream (I use light)
Sliced Black Olives
Sliced jalapenos
Cover a cookie sheet with foil, and lay a single layer of tortilla chips. Spread one can of chili over those. Sprinkle one layer of cheese over all. Repeat with layer of chips, chili, and cheese. Put gobs of refried beans around perimeter (about 2 inches in from edge of chips). Bake at 350 until cheese is totally melted. Take out of oven, and cover in gobs of sour cream, salsa/pico de gallo, and guacamole. Sprinkle olives and jalapenos all over. Serve with extra chips on the side because once it gets down to the bottom, everything is all soggy and delicious and scoopable.

My mom's is jello salad. She wishes she'd never made it because now our family wants her to every occasion lol.
I don't think that I do? Although I make good cupcakes and our family requests those a lot I guess.

You will need:
- 5-6 large boneless chicken breasts
- 16 oz. sour cream
- 2 cans of cream of chicken
- Poppyseed
- 1 box of Ritz crackers
- 2 sticks of butter
- salt & pepper
* Boil 5-6 boneless chicken breasts until cooked. Remove and dice or shred (I usually shred)
* In large bowl, crumble 2 sleeves of Ritz crackers. Don't make into a powder, but small crumbles.
* Melt stick of butter and add to crackers along with 1 tbsp of poppyseed. Mix well, and press down to make a bottom layer on a baking dish - I usually use two 9x9" pans so I can freeze one for later.
* Mix chicken with the sour cream, cream of chicken and salt and pepper well. Pour over crust and spread evenly
* Repeat Ritz cracker mixture and spread over top of chicken mix.
Bake for 20 minutes at 350 degrees, or until top is golden brown. Let set for about 10 minutes and serve. I usually serve it with rice and peas.

Mine is this southwest black bean dip. I think some people call it "cowboy caviar." It's pretty much always in our fridge in the summer and I take it to every cookout!

@mrs. wagon: I hate mayo so when I found a mayo free recipe, I jumped on it and made it my own. Here's what I came up with:
1 can of artichoke hearts (packed in water not the oil kind), chopped
1 box of chopped spinach, thawed and squeezed to get water out
8 oz of sour cream
8 oz cream cheese
2 cups shredded cheese, divided
salt and pepper to taste
Mix everything up together, reserving about 1/2 cup of cheese. Taste it to make sure you've added enough salt and pepper to your liking. Since I don't like this cold, I always scoop a little in a bowl and microwave it for about 20 seconds to heat. It's a little treat for the chef! Once you're happy with it, put it in a oven proof dish (a pie plate or 8x8 casserole is a good size) and sprinkle the remaining cheese over top. Bake at 350 for about 20-30 minutes or until it's bubbling on the sides.
This is a very forgiving recipe. You can use full fat or reduced fat items and it's still pretty good. It can also be baked at many different temps, just adjust the time. I've also heated it up in the microwave in a pinch or kept it warm in a mini crock pot.
Serve with veggies, pita, pita chips, crackers, etc. I actually prefer it with tortilla chips
I also make a mean salsa.
