DH and I are going to be making a 9 hour drive with the kiddos tomorrow evening. Other than sandwiches, what could we pack to eat for a meal (for ourselves, not the kids) in the car? We're trying to avoid spending a lot of time and money at fast food rest stops.

I'd pack cheese, roll up deli meat, veggies with hummus, pre-peeled/cut hard boiled eggs, so basically what I pack my kids for lunches/picnics

If you have a thermos you could have a pasta dish. They stay warm or cold depending on how you like it. -
I would make a batch of savory muffins because I would probably have food in my fridge that needs to be used up. I like to do ham and cheese. The base I use is actually Bisquick, so that makes it even easier. I would supplement those with some cut vegetables, like bell pepper strips and cucumber and some grape tomatoes.
I also would pack a few bags of dried fruit and nuts, a few bananas and nectarines and a couple of bagels with cream cheese. Water, and I would stop for hot coffee!

I always made frozen grapes when I was driving (4 hrs) back and forth to college. I'd suck on them like hard candy, or just chew them up. The level of sugar and the coldness would keep me awake and alert. Plus its healthy and it helps keeps other things cool in the cooler.
I always like eating goldfish too (they are a special treat in my family, for vacation only.) so pretzel version if i'm trying to be healthy or pizza if i'm splurging. The one other item I can think of is quaker oatmeal squares. These are very filling and sort of healthy.
Think of items like that, stuff that can be eaten one handed and isn't messy.I also recommend keeping a thermos of something caffeinated. Hot/cold tea/coffee - then you don't have to stop. I always needed a boost when the nearest stop was miles away!

Yay we just did this for the first time. We had to pack for dinner and also breakfast the next morning because we camped for one night, and then packed lunch and dinner on the way back. I have a greater cooler bag so we were able to pack normal food. Sandwiches, salads, lots of fruits and veggies, and cheese (sliced or strong cheese). I packed frozen yogurt drinks, bagels, and fruit for breakfast. Just don’t do anything like PB&J if they’re going to eat inside the car. I’ve also packed things like chicken salad and cold pizza in the past—usually whatever we need to clean out of our fridge so it doesn’t go bad before we get back.

We just Did this and I liked finger foods the most. Baby carrots, baby tomatoes, easy fruit (grapes, blueberries, cut fruit), maybe cheese (I’m lactose intolerant so I can’t eat cheese but my kids loved it on the road). Unsalted nuts. Nothing too salty or too sweet. And stuff you can eat one handed while driving. Maybe protein smoothies? I also like making energy bites.
I’ve also done sushi at times (usually rolls without those crazy sauces on top!).
After our 10 hour drive it took me an hour to vacuum out the car because of the insane crumbs.
Oh and I packed extra cold-brew ice coffee for me and DH because driving for hours through the desert is insanely boring!!

If it were me, hummus and carrots and cucumbers, seed crackers or pretzel chips, cheese sticks. Maybe turkey pepperoni. So like @snowjewelz: said, basically what I pack for my sons lunches
I’d also do yogurt pouches because they can be done one handed. Who says they are for kids only? Def invest in a good cooler and some ice packs, if it’s not too late. I love the Packit cooler bags that have the ice gel built into th walls of the cooler. You just freeze the whole thing and we’ve had it stay cold for 12 hours.
And I’m not gonna lie. For when the kids are sleeping I’d have a baggie of already unwrapped treats 🤫 what’s a road trip without your fave candy? Haha. Twix over here

Just finished two 7 hr drives a few weeks ago and managed not to buy anything on the road.
We made tons of chex mix (it's our special family favorite for road trips)
Other than that pizza traveled really well and grapes. I bought my favorite bottle of cold brew and filled up my thermos but next time I'm bringing the whole bottle on the cooler. It's cheaper than stopping for coffee for the whole family.
