Wednesday: Some kind of pork with veggies from CSA
Thursday: 4th cookout! Burgers, dogs, corn, yam fries. Good 'ol "American" meal 
Friday: Leftovers
Saturday: TBD will probably be hanging out with best friends that are moving Sunday

Wow, you are WAY ahead of me with the weekly plan...I'm hoping to get there eventually, maybe I'll pick up some ideas here! But tonight we are having pulled pork which is currently in our crock pot, with a side of baked beans and salad.

@regberadaisy: so glad to see you enjoying 3 cup chicken so much! i might use that sauce and try it with cubed pork loin this week.
monday: panfried seabass with a garlic butter sauce (DH went fishing on saturday and caught 5 large ones!). must use it up before it's no longer fresh.

Sunday night: chicken kabobs on the grill, steamed broccoli, pan fried potatoes, mac and cheese, fruit
Mon: baked chicken tenderloins, broccoli, salad
Tues: out
Wed: quick meatloaf muffins, mashed potatoes, fruit
Thurs: BBQ
Fri: no idea yet, depends on how the day goes, probably dinner at my parents house. -

Avocado / Tomato /Mozzarella Salad
2 avocados (peeled, pitted, & cubed)
2 - 3 tomatoes (cubed) (we use cherry tomatoes)
1 ball fresh mozzarella cheese (cubed) (8oz)
2 Tbsp extra virgin olive oil
2 tsp. basil (we used dried, but you could use fresh)
salt & pepperPut the cubes of avocados, tomatoes,
and mozzarella in a bowl.
Drizzle with olive oil.
Add basil, salt & pepper.
Mix lightly.
Enjoy.
(Best to eat it right away.
At room temperature.)we slice up toasted french bread real thin and top it with the salad!

Last night was chicken and pea risotto, rest of the week is tomatillo sauced rice and bean enchiladas, Greek mini burgers with cucumber relish and flatbread, spinach pesto and sausage strata, and sweet potato and kale chicken burgers.

Saturday - we're going to my parents for a picnic. I'm making broccoli salad (we're also drowning in broccoli!) -
