Hmmm...I don't know & I'm for the most part, Paleo, so, hmm, I might be boring:
My options are some of these:
Baked chicken and potatoes
Roast beef stew with tons of veggies (DH eats his atop of brown rice)
Grilled shrimp salad with a side of lentil soup
Tuna and dill with red peppers, wrapped in lettuce wrap
Beef kabobs on the grill and grilled veggies (I like to dip kabobs in guac)
You can add a card side to any of cheese (Mac n cheese, broccoli Alfredo, quinoa, buttered bread rolls..)

@TurtleDoves: all of those sound like such good paleo meals! I wasn't that creative when I ate paleo but I still try to make gluten free, dairy free dinners often.

@TurtleDoves: Sounds so good! How do you cook shrimp on the grill? Now that I think about it, I've never really cooked shrimp at all! I'm definitely looking for more grilled meals now that it's nice out.

I did sandwiches tonight. Tomorrow it's creamy Italian chicken over pasta. Tuesday is unknown...and so is the rest of the week haha!

Tonight was BBQ pork pizza with spinach & carrots, tomorrow is black bean tortilla lasagna, then later in the week is lentil cheesy hash stuffed sweet potatoes & pea/chicken risotto. I dug out all the recipes I've printed but not used yet and made a pile, I'm determined to go through them all before I print any more or check out any more cookbooks

@scg00387: BBQ pork pizza is so good! I didn't know anyone else who likes it.
This week is kind of lame because we're budgeting groceries now so I have to use minimal ingredients.
Monday: grilled quesadillas
Tuesday: caprese panini's
Wednesday: taco salad
Thursday: balsamic quinoa pasta
Friday: BLT's

@HLK208: Our inlaws gave us BUCKETS of pulled pork leftovers from my brother in law's graduation party... I've been trying to come up with different ways to use it up! And... YUM BLTs are so summery, I need to make those soon!

@MrsF: I just marinate it beforehand and then jab them through some skewers! So, shrimp on a stick kinda?

Sunday: Chicken wings with celery and french fries
Monday: Tacos and Spanish rice
Tuesday: Fish, roasted carrots, and steamed broccoli
Wednesday: Ratatouille over ditalini (store was out of orzo and quinoa!)
Thursday: Pork Tenderloin, peas, corn, and crescent rolls
Friday: Balsamic brown butter ravioli with garlic bread
Saturday: Sweet & sour chicken with fried rice
I usually end up changing the days around but that's what's on the menu! I'm so excited to try the ravioli recipe!

Mon: burgers on the grill
Tues: pizza
Wed: roasted chicken

It's a plan-in-progress, so far we have:
yesterday: grilled sockeye salmon, salad: kale, arugula, spicy greens, carrots, hard boiled egg, tomatoes, red onion.
tonight: spicy jalapeno/cilantro peanut noodles with veggies (snap peas, red pepper, carrots, something else)
tomorrow: fish tacos with cabbage salad
rest of week: homemade pizza and caesar salad one night, grilled veggies and salad another night.

I'm trying to limit my oven use since it warms up the kitchen so much. I'm done with the oven for the week since I made the lasagna last night! We'll grill the eggplant the same night as the kabobs but save it for dinner the next night.
@TurtleDoves: Now you've gotten me excited about grilling shrimp... Maybe that will go on my plan for next week?

We are having a boring week

This recipe turned out so good. We used a six pound chicken and cooked it longer.

M: Quinoa with sauteed mushrooms, sweet potatoes and kale
Tu: Chickpea burgers, sweet potato fries
W: Tilapia fish cakes, roasted asparagus
Th: Grilled eggplant, sauteed spinach (maybe baked eggplant parm, undecided still)
F: Steak, sauteed green beans and mushrooms
Sa: We'll probably go out.

I'm on my own this week, so I picked up tortillas, eggs, tomatoes, onions & shredded cheese. I will be having omelettes or breakfast burritos / quesadillas all week. I also got a box of macaroni and cheese and some tuna if I feel like mixing it up. I'm really fancy.

@T.H.O.U.: I boil the quinoa pasta normally, on the side I heat up olive oil, garlic and basil then add halved cherry tomatoes, I let them cook and add about a half cup of balsamic vinegar and let it simmer then combine with the pasta. It sounds simple but it's so good. I don't really follow a recipe but I always seem to eye the amount according to how much pasta there is.

M - making more pasta to go with leftover sauce. might grill more chicken sausage for the sauce, I think we ate most of that.
T - sweet potato/black bean burritos with leftover Spanish rice
W - thinking of trying a beef and onion kebab recipe, with salad
T - fish, maybe? With cous cous and broccoli usually.
F - we're going camping, so something quick before we leave.

@turtledoves: ooh grilled shrimp salad sounds delightful! I've had some really tasty ones recently at restaurants -- one was a shrimp ceviche/Mexican style salad and another was a Vietnamese green papaya salad. I need to try to recreate those... Perfect for summer!

I'm interested in making a whole chicken in the crockpot (I've only ever cooked it in the oven, so we'll see!) and using leftovers for tacos and stirfry over soba noodles

@regberadaisy: it's a lean white fish that's on the firm side rather than flaky. i think it's most comparable to flounder overall, except flounder is a rather flaky fish.
if you are looking for another firm textured substitute for sole, i would look into grouper, catfish, cod (pacific) and halibut (pacific).

@NorCalWayfarer: It's really easy, though it never tastes as good as a roasted chicken. I typically use the crockpot when I'm going to use the chicken in other recipes throughout the week. But it's still tasty by itself.
