What's your go to side dish for a summer potluck?
We have one coming up and I'm trying to think of something easy to make ahead since it's a busy day. Ideally my dish would also go with tacos. I usually make a nice summer corn salad, but I prefer to make it fresh right before but don't know that I have time for that.

I don't really have a go to but I like making a black bean salad during the summer. It tastes fine if you make it ahead and it would go on tacos well. We eat it over rice.

I'm not 100% sure about how well sesame & tacos go together (assuming they are traditionally flavored tacos - Asian tacos would be awesome with it!) but I make this ahead frequently and have always gotten rave reviews: https://subeeskitchen.com/2013/06/29/edamame-corn-farro-salad/

I don't know if you'll have time to make it but I always bring this Lemon Quinoa Cilantro Chickpea Salad. It's always a hit and people always ask me for the recipe. It doesn't take too long and you could likely do most ahead of time and throw the dressing and avacado in at the end.

Black bean corn salsa (can make ahead), Mexican street corn pasta salad (easy to throw together ahead), or tortilla rollups.

7 layer Mexican dip is always a huge hit! You can google different recipes.
I also love this quinoa salad: kale. cranberries, garbanzos, almonds, feta, with honey vinaigrette. SO good and even quinoa haters love it.
