@farawayyama: last night's dinner turned out great. I use golden raisins in my cereal and my husband thought the cherries and apricots were those. Lol
I ended up using boneless, skinless thighs and those were really moist. After I removed the chicken from the pan, I used a little chicken stock to lift all the pan bits and added a little cream cheese and a little orange marmalade to make a sauce.

Oh, another thing you can do is use cream cheese in pie crust. It makes it more forgiving.

For an easy snack or lunch, slice apples thin and sandwich them between two tortilla shells spread with cream cheese and sprinkled with cinnamon sugar. Then spread a bit of butter on the outside and lightly fry them (or use a panini press/griddler) until lightly brown
I found Ambrosia apples and they were amazing. But any sweet firm Apple is good (so they stay crisp

@Mrs. Lemon-Lime: So many desserts! But one of our favorite dishes is skinnytaste Cajun pasta. Sooo good!
