I really think you can because I've had two different experiences with breastfeeding/pumping. With my 1st - no oversupply. With my 2nd - huge oversupply. He's almost 8 months, and in this morning's pump session I pumped out 10 ounces even though I never feel engorged anymore.
With my first, I hardly pumped the first 3 months, and when I finally felt ready enough to leave the house for a date night around month 4-5, I pumped just enough to make up a feeding. I was never able to pump more than enough for one feeding each time because I think by then, my supply had evened out. When I went back to work when she was 7 months, I only had a small stash and was never able to really add to it.
With my 2nd, I pumped from the very beginning and struggled with oversupply. I was easily pumping out ~12 ounces per session, most sessions. I have a deep freezer filled halfway up with frozen breastmilk, but have no idea how much it is cuz I haven't taken inventory on it.
Eta: I think if you're intentionally trying to create an oversupply, the first 3 months is the time to do it. Once they're out of their newborn stage, I think it's a lot harder to do.

I think you can too, with early and often pumping. Early as in... While you are in the hospital. I did that accidentally and have had an oversupply since-my LO had jaundice and they said she needed a certain amount of liquids and wanted to give formula, so I started pumping every 2 hours around the clock to take colostrum down to the nursery... And 24 hours later it was like my boobs exploded and my milk came in. Since she still had jaundice I continued pumping do I could track how many oz she was eating from a bottle and I had to really work to eventually stretch out my pumps to first 3 hours apart and now 4 hours apart.
Yesterday I slept 8 hours, and woke up and pumped 14 oz out. Felt so good to get it out!
