Earth's best pre-cooked meatballs & bbq sauce, yogurt, cheese, a pouch, etc. ha. I have gotten pretty good about quick and easy meals dealing with 2 at home

@lilyann: Yup. Sometimes with my two a meal consists of whatever I can grab and serve with one hand out of my fridge.
Our go to meal for C is usually scrambled eggs, cheese/yogurt, and some fruit. Quick and he loves it!

Having frozen healthy mini muffins is a life saver in itself haha.

Fishball noodle soup! I always have homemade stock and fishballs in the freezer. I just add whatever veg I have on hand. And it's a guaranteed eat for DD.

Cheese cubes and a pouch or frozen veggies. She will eat cheese cubes all day. Some of your "easy" meals are about as complicated as we get in this house! And I like cooking!

@regberadaisy: do you have a recipe for fish balls? I try to have ready made frozen proteins on hand, but I never thought of fish! My go to quick meal is beans, cheese and a frozen veggie.

Whatever frozen veg we have in the freezer, a frozen protein (like a cube of chicken breast), and maybe half an avocado for something fresh.

@kpc324: nope. I stock up in NYC when I'm home. I get it from a lady that makes them. She has a little storefront in Chinatown. DD 1 is addicted to them along with fish tofu!

Aidell's meatballs (they have one type that are totally dairy and soy free) warmed up, with whatever frozen vegetable I have. Honestly, all the cooking I do is "lazy" cooking because I only have an hour after we get home until I have to feed LO. So usually I just steam a veggie and cook some type of meat really fast. Almost everything is from frozen.
Another lazy meal is frozen salmon fillets--I just throw them on a pan with olive oil, a bit of salt and pepper, and dill and broil for 10 min.

Frozen peas dumped straight out of the bag (she likes them cold), cheese quesadilla and whatever fruit we have on hand. Total of 5 minutes prep if that.
