If it's that last-minute, I would buy a Lunchables meal for my kid and pack a sandwich/chips/drink/fruit for my husband. Is it super healthy? No, but I don't have time to plan fancy lunches a day in advance, especially if I have to cook anything.

@mediagirl: turkey and cheese, Ham and cheese, Sunflower butter and jelly, Salami are all popular with my LO.

@mediagirl: to make it "fancy", you could get tortillas and do turkey and cheese roll-ups, then slice them to make little pinwheels. My daughter (3) loves having her sandwiches in unique little shapes, and if she eats it, I'm willing to do that or cut it into the shape of a star or something.

Toss a pouch in the freezer now and throw it in in the morning. A simple sandwich (bread, mayo, cheese, meat) and pick two of pretzels, goldfish, carrots, cucumber, fruit, string cheese, fruit leather type stuff. DH gets the same lunch, bigger portions. LO's samdwich gets cut with a cookie cutter. Water bottles for both.

I do a ham and cheese or salami and cheese roll up, yogurt, piece of fruit (or cut fruit) and crackers. We have to pack lunch and that's what he gets a lot of the time. Other times its hummus and carrots, leftovers in a thermos, or spaghettios
