I didn't get super engorged, but the consistency definitely changed, as well as the color from golden to white. Also, this may be tmi, but with my milk when I hand expressed it shot out quite far, colostrum only ever dripped out.

Sorry, I had to say just that.
The biggest things I noticed:
1) my boobs were suddenly twice as big and up to my chin
2) I could hear NavyBaby gulping, which I never could hear when he was just drinking colostrum.

mine did not come in suddenly, no engorgement, no increased boob size (though they went up 5 inches in the first 9 weeks of pregnancy and then a little more after that--they haven't changed since 27 weeks or so)
My lactation consultant said some women don't get it coming in suddenly, especially not-first time moms, and moms of babies who will,not.stop.nursing. until the milk comes in--I guess that makes it come in more gradually or something?
I also noticed that I went from pumping not even a drop, to 2oz, to 10 oz....

I knew when I had major engorgement and squirting. Sadly, this didn't happen to me until I was 2-3 months pp!

@pastemoo: I didn't have any of the engorgement either...everyone said I would know bc my boobs would get huge and rock hard and painfully full...didn't happen to me (eventually happened a month or so later due to oversupply issues but not when my milk first came in)
My LO lost too much weight in her first few days so I was pumping after each nursing session and also syringe fed her formula or expresse breastmilk...after a day and a half I supplementing after each feeding LO stopped taking anything from the syringe bc she was getting plenty of milk. Also like others said, I went from pumping this golden colored milk to white (sometimes bluish white) milk...and you go from pumping drops (barely an ounce) to multiple ounces.

@Navy_Mommy: I laughed. Hurt my c-section incision, but I still laughed anyway. LOL
My milk is still golden so I am assuming it's not completely in yet.

@belleoftheballe: I would think you might be transitioning, my milk was very much white once it stopped being colostrum. It turns yellow in the fridge, but its white when freshly pumped.
