Pumpkin spice, carrot, and red velvet. I always use cream cheese frosting for those.

@autumnlove: Oooh hummingbird or pumpkin also sound soooo good! I don't know how you'll choose. And yup, when I do carrot I buy the shredded carrots and just pop those in the food processor.

My absolute favorite combo is spice cake + cream cheese frosting. Next would be lemon cake, strawberry cake, then chocolate. Mmmm!!! I see a lot of houses who will have baked goods soon

For LO's first birthday I made banana cake with cream cheese frosting. I brought it in cupcake version to daycare and they all loved it (including the teachers)!

You could do a different spin on red velvet and make a different color. I had and made a blue velvet cake. It could be their something 'blue'. Or not, if you think it might be offensive. Anyway, you could pick or make any color.
Other suggestions maybe a German chocolate cake.
I like carrot cake but I think I would pick red velvet over carrot cake. I do like chocolate cake over other cakes.
I do love anything pumpkin so pumpkin spice sounds yummy.

@bluestriped bee: I've only recently tried making it! It's sort of a spice cake, with pineapple and banana in it, then covered in cream cheese frosting and pecans. It's REALLY good.

I second those who said hummingbird cake! My absolute favorite cake and I think you could easily make it into cupcakes. This recipe is similar to what I use: http://www.foodnetwork.com/recipes/food-network-kitchens/hummingbird-cake-recipe.html.
