Share Your Crock Pot Favorites!

    Scrolled through, here are a few of mine that haven't been mentioned. I didn't save sources or links

    Pineapple Pork Shred

    What you need:
    • One 3 pound pork shoulder, roast, or tenderloin
    • 1 can of 6 chipotles in adobo sauce
    • One 8 ounce can of crushed pineapple (juice and all), or 2 cups of fresh pineapple, chopped.
    • One cup of white onion, diced.
    • Half a cup of orange juice, or the juice of two large oranges.
    • 4 cloves of garlic, smashed.
    • 1 Tbsp of apple cider vinegar.
    • 1 tsp of oregano.
    • 1 tsp of cinnamon.
    • 1 tsp of cumin.
    • 1 tsp of black pepper.
    • 1 tsp of sea salt.

    Blend/food process everything but the meat together & marinate the meat in the resulting slurry overnight. Slow cook on low, shred and serve.

    Thai peanut butter pork tenderloin

    Ingredients

    1.5-2lbs pork tenderloin
    1 onion, sliced in rings
    1/4 cup soy sauce
    1/4 cup brown sugar
    3 tablespoons white wine vinegar
    3 tablespoons water
    2 garlic cloves, chopped
    1/2 cup creamy natural peanut butter

    The Directions.

    Put onion slices into the bottom of your crockpot. Put the pork on top. Add brown sugar, soy sauce, vinegar, water, garlic, and peanut butter. Cover and cook on low for 8 hours, or on high for 4-6. flip the meat over in the crockpot to allow the other side to soak up the peanutbuttery goodness.

    Crockpot Blueberry Cobbler
    • 1 1/4 cup flour (white, whole-wheat, or a mixture of both)
    • 1/2 cup sugar or raw sugar
    • 1/4 teaspoon salt
    • 1 1/2 teaspoon baking powder
    • 3/4 cup milk
    • 1/3 cup melted butter
    • 3 cups blueberries
    • 1/3 cup sugar or raw sugar
    • 1 teaspoon vanilla
    Mix together flour, 1/2 cup sugar, salt, and baking powder in a bowl. Stir in milk and melted butter to make a smooth batter.
    Grease crockpot thoroughly with butter or shortening. Pour batter into greased crockpot and spread around to evenly coat the bottom of the crockpot.
    Sprinkle the blueberries over the batter, sprinkle with remaining 1/3 cup sugar and drizzle with vanilla.
    Bake in crockpot on high for two to three hours until done.
    Serve warm with ice cream.

    Alright, I am slow cooking!

    Yesterday I prepped a pork shoulder for pulled pork sandwiches, which I then froze. I also made a lasange, also frozen.

    So far nothing is cooking, but I have that on the plan for Wednesday. I think I need to do the lasagne because it's currently in the insert, in the freezer. I don't think it was the smartest thing to do, maybe I should take it out tonight just to pull the bag out and refreeze?

    Gah, why is this so complicated! I am a decent cook too!

    And here I was patting mahselfs on the back for making crockpot chili last night . . . because I *never* plan ahead, and I totally need to! Dinner should not be stressful!

    @swurlygurl: LOL and ditto! My world has been rocked and my mind blown!

    ETA: I totally wish there was an option to print threads! @MrBee . . . is that possibility?

    One of our favs is beer roast!
    You quickly sear a roast on both sides, and put it in the crock with a packet of dry onion soup mix, two cans cream of mushroom soup, a bottle or can of beer (any kind) and as many pepperoncinis as you like with a generous splash of juice from the jar. Cook on low for 6-8 hours.
    We usually make sliders on dinner rolls with this recipe. So good!

    So on Tuesday night I planned ahead to make the lasagne I had frozen. I took the entire insert out of the freezer and put it in the base. My husband bought an extension cord that he can remote control over the internet, so we could turn the cooker on at noon. I let the lasagne cook on low for 6 hours, turning it off when i got home around 5:30. We ate it about an hour later, at room temp. I was able to get 2 nice portions of leftover and the cleanup was a snap because i used a liner.

    I AM A CONVERT! I spent a few minutes this morning browsing Real Simple's website, they have some really nice options for slow cooker meals that are a little more refined, which suits our tastes better.

    @babyjmama, @mrskc: I can't take the credit, it was my husband. The whole thing started because I wanted a slow cooker with the insert that you can put on the stove and sear in. So instead properly researching and looking for something with a timer, I bought the first one I saw from Breville. My husband, who's pretty tech saavy, said he had a solution and promptly ordered a cable for it.

    What's sad, is that I am paranoid it's going to set the house on fire, so for now, we've set up a foscam so I can check the cooker. We're sad.

    I am starting to relax a bit with it, I just have this irrational fear that my house is going to burn down because of this obsession with having dinner on the table when we get home!

    I love cooking turkey breasts in the crock pot.
    I just slice some onions and layer it on the bottom, put the turkey breast on top and put some chicken stock on it. I usually make mashed potatoes on the side, but I've thrown carrots in there as well. Cook on low for 5-7 hours.

    @babyjmama: i made the creamy italian chicken! DH loved it, but it was a little - something - for me sadly sat weird. it did taste good though!

    I made these pork chops today (with way less oil - I used about a table spoon and increased the stock to a whole can) and they were tender and delicious! The sauce turned into a yummy gravy with a bit of corn starch and I served it with potatoes and asparagus. Will make again for sure

    According to her; I did do a couple of tweaks, though. I added green onion and cilantro to the slaw mixture for some added kick. I also made a little sauce to go on top -- a mixture of mayo, sour cream, sriracha, & bacon fat! You could also whip up your own sauce. This would also make for an excellent burrito if paired with your favorite rice!

    If this goes well, I am definitely going to use my slow cooker more often.

    Do any of you ladies pre-prep and freeze slow cooker meals? I'm thinking that might be great for when I go on maternity leave this fall/winter.
