oooh. i love this thread. crock pot meals are just so comforting to me. one of our go-tos when we're feeling lazy and feel like indulging is a chicken dish. the ingredients are so very basic and standard. there's no name for it, and we eyeball everything.
-3 large skinless, boneless chicken breasts
- 1 bag frozen carrots and peas
- 1 bag frozen broccoli florets
- 1 container baby bella mushrooms, halved
- 1 can condensed cream of chicken soup
- 1/2 - 3/4 bottle of any white wine lying around
- s&p to taste
cook on high 4 hours. it has a stew-like texture and is perfect over plain white rice or egg noodles. yum!

@Ash: oh my, lasagna in the crock pot is GENIUS. My husband doesn't know it yet, but he thanks you;;-)
The creamy Italian chicken I make is:
4 chicken breasts
1 can cream of mushroom
1 can cream of celery
1 block cream cheese
1 packet of dry zesty Italian dressing
Cook on low 4 hours, serve over tri color rotini. YUM!!!

I don't use the fancy beef concentrate, I just use 4 cups of beef broth and 1/2 cup of wine and the water and it comes out just fine.

Pulled chicken is good in the summer...easy sandwiches! I do a few chicken breasts (3ish). Put some regular root beer in on the chicken, like an inch. Cook on high for 4 hours. Drain and fork shred. Then add in your favorite bottle of BBQ sauce and cook on low for 2 hours or so. Serve in a sandwich, over rice, or on it's own

That lasagna one that @Ash: posted looks like the one running elley sent me. It's really good! I made it with Italian sausage and it was sooooo good!
All purpose shredded beef is easy. We get a large chunk of meat and freeze some. I made the Hoisin tacos and the beef Ragout and both were great!

We also have done ribs in the slow cooker too. We just put the ribs in there with some BBQ sauce and cooked on low for around 6 hours.

@mrskc: Our favorite crock pot meal is the chicken with a jar of salsa. It is so good! We eat it in tortillas or over salad with avocado, corn, black beans...whatever we happen to have. It's crazy how easy and good it is.

We've been lower carb-ing it and end up using the crock pot a lot. We usually eyeball stuff with meat + veggies + seasoning, but my FAVE is crockpot pizza! It really does taste/feel like pizza to me, even without the bread: http://yourlighterside.com/2012/04/crock-pot-pizza/. If you do this, be sure to put a couple of paper towels between the crock and the lid - it will soak up extra moisture so it's a little more pizza-ish!

@babyjmama: this past week, I have made:
Mexican lasagna - pour in salsa, layer 5 tortillas,
on the stove: cook chicken with garlic, cumin, red pepper and salt. Put in kitchen aid when done, add cream cheese and corn.
Back to crockpot: put one layer of chicken mixture in crockpot, top with cheese, salsa, 3 tortillas and repeat.
Crockpot pasta - break pasta in half, place in crockpot with 3 cups water, sauce, meat and parm, cook on low all day.
Italian chicken - 2 cups Italian dressing, 1 pack Italian seasoning, parm, and add quartered red potatoes.

Sweet & Sour Meatballs
-1 part grape jelly
-1 part chili sauce
let simmer and then add frozen meatballs!
BBQ pulled pork/chicken/etc

-1/2 cup italian dressing
-2 tbsp worcestershire sauce
-1/4 cup brown sugar
Mix and pour over frozen meat in slow cooker. 3-4 hours high, 6-8 low!
crockpot lasanga
1 lb. lean ground beef (could be substituted for italian sausage, ground turkey)
1 jar spaghetti sauce
1 c. water
1 15 oz. container of ricotta cheese (we used skim ricotta to save some unneccesary fat haha)
1 pkg. Kraft Italian Cheese (approx. 2 cups, any Italian blend shredded cheese works, doesn't have to be Kraft!)
1/4 c. grated parmesan cheese
1 egg
2 tbsp. parsley
6 lasagna noodles, uncooked
Brown meat in large skillet; drain. Stir in spaghetti sauce and water. Mix ricotta, 1-1/2 cup mozzarella, 2 Tbsp. parmesan, egg and parsley.
Spoon 1 cup meat sauce into slow cooker; top with layers of half each of the noodles (3 noodles broken up per layer), broken to fit; and cheese mixture. Cover with 2 cups meat sauce. Top with remaining noodles, broken to fit; cheese mixture and meat sauce. Cover with lid. Cook on low 4-6 hours or until liquid is absorbed. Sprinkle with remaining cheese; let stand, covered, 10 min. or until melted.
*Ours only cooked for about 3 1/2 hours cause we were starving, it was fine - plus the meat is cooked beforehand so it is safe.

@sorrycharlie: yes! Running Elley sent me the lasagna recipe you gave her and it is so good! I think I'll make it again this week. I was eating it for my lunch at work a couple of weeks ago and a bunch of my coworkers smelled it heating up and all kept saying how good it smelled.
@HLK208: 's mex lasagna recipe reminded me of this chicken enchilada casserole that is really good. I just buy a rot. chicken at costco and shred it up.

@Lindsay05: Yay, it is super yummy! And surprisingly, the cheese on top gets browned/chewy/crispy (this is probably true for all the lasagna recipes too). So good.

@mrskc: I sautéed them on the side with some s&p and cayenne, then added on top. Bell pepper can have an overwhelming fragrance sometimes, so I refrained from throwing it into the slow cooker. Thank you so much for posting! It was so simple and I happened to have everything on hand.

Thanks for the ideas! We always do beef stew over and over again. Chop onion, potatoes, carrots and meat. Add seasoning and diced tomatoes if you want.
