Has your pediatrician mentioned having an immature esophagus? My friend’s son vomits after eating/drinking too much or too quickly, especially before bed or if he gets overly excited. They did some testing but best guess was an immature esophagus and that the vomiting would stop when he got older. It was actually improved in the last year or so (he’s 4 now). Otherwise, maybe acid reflux? I hope it doesn’t keep happening and bother your little guy!

My DD (now ten) had this. She was found to have both mild acid reflux which required medication AND an upper hernia which was causing her stomach acid to regurgitate into her throat (1) after eating too much, (2) after rambunctious play, (3) and when sleeping on her back (* She had a side sleeper prop starting at 5 mos old). She was always "fine" once she made the "sour lemons" face and vomited... would just continue on with her business as if nothing happened and wasn't in pain. She still has residual issues. She LOVES good food but can't over do it and, after eating, she really can't run around TOO much otherwise her food creeps up towards her throat. Tums and an occasional dose of acid reflux medication keep her in check, otherwise, she is absolutely fine.

My daughter had what we assumed to be a stomach virus that acted this way when she was maybe 18 months old - vomited only once or twice at night for 4-5 days. I think it had to do with her laying down and having mucus draining down her throat (and having a pretty much empty stomach, overnight)...but it's never happened again and she's 6 now.
