Last night I had no dinner plans for M. I came home and we opened the fridge to look around. The only protein I saw was eggs....lightbulb!
I remembered that Mrs Bee had posted a steamed egg recipe: http://www.hellobee.com/2013/04/03/steamed-egg/ . I grew up on this as well but you know Asian moms never cook with a recipe!
So I used it as a base and added to it stock my mom made with pork bones in lieu of water to make it extra nutritious. I like to give M a protein, vegetable and fruit for meals. So I added peas and dehydrated shrimp to the egg mixture. It was super easy, delicious and nutritious! (I might have eaten her leftovers) And for dessert she had 3 slices of oranges!
