What do you know she likes and dislikes?
I cook LO’s veggies and meats in butter to slip her some extra fattening-up calories.
Full-fat yogurts and cheeses.
Avocado is full of good fats as well. If your LO doesn’t like avocado by itself, try offering it as guacamole (my LO prefers guacamole with a little onion and spices as opposed to plain avocado chunks), or you can puree avocado and use it as a pasta sauce, or a dipping sauce if your LO likes to dip things.

When we got to this point we made pasta with melted cheese and butter. Then we could mix in any veggies or meats we had on hand.

Cooking with butter adds fat! My LO ate lots of full fat cheese and yogurts. I tried to sneak either butter or Olive oil into everything I made

We did a lot of homemade muffins with fruits (blueberry, whole wheat apple, and cranberry pumpkin) and scrambled eggs with cheese.

@pelikila: ohhh muffins are a great idea! handheld and carbs... I don't know if any picky toddler would say no to that. It would just be tough to not nibble on them yourself...!!

@yoursilverlining: Avocado is one of her major dislikes apparently. It was the first food we ever offered her and she has hated it ever since. I haven't tried guacamole-style, it's worth a shot.
She is sooooo unpredictable, that is part of the problem. She likes crusty rolls so I tried to make her an English muffin with butter and jam and she was not having any of it. Wouldn't even let it near her mouth. UGHHHHHHHH. If I could find a way to infuse animal crackers with vegetables and olive oil I would have no problem haha. Grapes are the only other thing she will eat without fail. Sometimes I try to dust them with baby cereal just so maybe some more vitamins and minerals will get in there.
@pinkcupcake: @mrs. wagon: Yes! I have gotten to the point where whatever I attempt to give her, I just melt a pat of butter on top and hope for the best. She won't even eat yogurt ugh. And she's iffy on cheese, depending on the day.
@pelikila: Thanks, muffins are a good idea, she does like carbs more than anything else. It's like she can sniff out anything of nutritional value but I've got to keep trying.
You guys, this is nuts. I am on Weight Watchers! I spend half the time trying to make my own recipes as low in fat and calories as possible and the other half of my time trying to concoct the most fatty foods possible for my child. Sometimes I can't believe this kid has my DNA!!!

@mamimami: do you bake? I have a recipe for avocado naan that's really yummy. Making crackers or muffins with coconut or avocado oil boosts fat.

How about dried fruit? Depending on her her teeth situation you could do whole or blend it up like a homemade larabar. Little boy loves dried figs, dates, raisins.

I have a breadmaker so I just used the ingredient list, dough cycle, then fried in avocado oil. They are SO good, and LO couldn't eat them fast enough. There are lots of avocado "spins" out there like chocolate pudding, that you could try!

@mamimami: Oh, I know what you mean! It's so weird to me to cook her food in butter, when I always use the non-stick spray! I always buy both the low/fat-free option for myself and the full fat version for her. Our fridge is packed.
I was always stressing over how little my LO ate. I just tried to sneak calories in whatever way possible. For example, she ate congee pretty well, so I would make a meat-based congee and add a mashed up hard boiled egg yolk. I'd put the egg yolk in purees and yogurt, too. She liked the taste of sesame oil so I used a lot of that. If your LO likes pasta, maybe you could try pasta tossed with butter and parmesan, and add some peas?
