We grill or stir fry! Or even slice thin and bake in oven.

@MusicaV: okay, I do this for myself and DH, but it woudl be perfect for a LO (texturily speaking). Dice the zucchini into very small pieces (I dice it even smaller than I would an onion to be in pico de gallo, for instance). Cook it in a skillet on the stovetop in a drizzle of olive oil. Add a teensy bit of butter for taste.
For us, I also add spices (onion powder, a 1/3 of a ranch packet, etc), but for LO, you could just stop there. After cooking about 10-15 minutes (maybe less), the zuccchini will be very soft and delicious.

i usually saute them in olive oil. i also make cheesy zucchini muffins and freeze them for a quick lunch for lo.

I dice it up and sauté it in olive oil with some minced garlic. Zucchini is LO's favorite veggie!
