If you use an in home daycare, how do taxes work? Is the provider basically self employed and pays taxes on their income that way? Since it isn't a nanny, I don't think I would be responsible for withholding taxes since she would not be my employee, right?? Is this something I'm suppose to ask when I take a tour or am I overanalyzing?

For the place we chose, they pay taxes out of what I pay them. They are self employed

I would think she is responsible for her own taxes. It may vary by state, but my Mom ran a daycare in our home and was responsible for her own taxes.

They should pay their own taxes. At the worst, they are a contract employee (make their own hours, determine where they work, etc) and you would 1099. For yourself, you need either their tax id number or social security number and you can claim them for the tax breaks.
It doesn't sound like you are trying to do this under the table, but if they are and you put their social on your taxes, they will have to claim your income.
