LO would survive off of bread and crackers and blueberries if we let him. But I'm trying to get serious about his vegetable intake. He won't eat them straight up, so I'm trying to find other ways. Here is what we have so far:
Carrots - muffins, in veggie pancakes (2c grated zucchini and carrots, one egg, quarter cup milk, quarter cup flour, some baking soda), smoothies
Spinach - smoothies
Cucumber - in a watermelon, cucumber juice popsicle
Tomatoes - salsa, spaghetti sauce
Zucchini - veggie pancakes
Sweet potato - mixed with applesauce
And he will eat anything in a pouch.
Things that have been a no go, so far: frozen peas, steamed anything, corn off the cob, sweet potato fritters, creamed spinach, mashed sweet potatoes, soup.
Any new ideas?
