I pack a 7 course meal for my LO (almost 13 months). A protein, 2 different fruits, yogurt, 2 vegetables, bread. Its a struggle for me every day.

Lunch during the week is usually leftovers from dinner, or what my mom eats when they're together (she goes to daycare 3 days). Weekend is whatever we eat.
When I have to make up a lunch b/c we have no leftovers, it's usually cheese/fruits...

It's usually some sort of sandwich and fruit - hummus, pb&j, grilled cheese, etc. or a scrambled egg with veggies and cheese mixed in. If I have leftovers, it's some type of chicken or a turkey burger, maybe soup. Sometimes we'll go out for pizza or to the diner as a treat.

A typical lunch that I pack for him is
1. a fruit -today an apple
2. cheese stick
3. a fruit and veggie pouch
4. sometimes an extra veggie- today cucumber and tomato with ranch dip
5. an main item like PBJ, chicken nuggets, pizza, left overs
Tomorrow he has a banana, a pouch, peas, cheese stick and chicken nuggets
He always eats it all at school. He doesn't eat as much for dinner.

My kid can't have dairy, and she doesn't generally like sandwiches, so lunch is almost always leftovers from dinner the night before. Today was chicken and half a sweet potato.
