DD had a private nanny from 3-8 months, and her nanny was an ASL certified instructor. So she started at 3 months. Her first sign was "snow" at around 7/7.5 months, and now she helps us sign with her baby brother! We started with him pretty much from birth, and his first sign was "all done" at about 7.5 months. Now, at 8.5 months, he signs "all done," "dog," "more," and "mama."
I mentioned on your other post that there have been a couple blog posts on signing. Here's the links!

You can start as early as you want. They'll learn faster if you consistently do it so it's good to start early so you can get into the habit of providing the sign when you speak to LO. My LO started signing back around 8-9 months.
