It's not really a recipe but it's simple enough - I make meatballs by adding in some milk, breadcrumbs, an egg and some garlic powder to the meat. I've only ever cooked them directly in tomato sauce, but I know you can bake them too. And I think these would probably work well in the soup!

For every pound of turkey, I add 1/2 cup Italian bread crumbs, 1/2 cup parmesan, 1/2 cup tomato sauce. If I were making them for others, I'd add Italian seasoning, salt, pepper and red pepper flakes. I bake for 20 minutes at 400 degrees.

@fancyfunction: Thanks! We haven't introduced cows milk or eggs yet. Is it a problem cooking with them?

@StrawberryBee: You know, I gave M items that contained a little milk in them (like meatballs, pancakes, etc) well before I introduced milk for her to drink and we didn't have a problem - but it's always safe to wait if you don't feel comfortable doing so

I saute some onions and add them in to the turkey. I also add garlic, breadcrumbs, egg, italian seasoning, salt and pepper.
I like to cook them in chicken broth because they get softer and the kids like that consistency better.

I do something similar, I sautee diced peppers, celery, onion and sometimes zucchini, but for meatloaf. It would work nicely for meatballs too, as long as the pieces are small.
And I'd sub in finely ground oatmeal for the breadcrumbs.

I make ground beef ones all the time. One pound of meat. In a bowl mix one egg, salt pepper garlic powder and generous pint of breadcrumbs (progresso plain). Mix together well and make small meatballs. Brown in pan of hot olive oil and then add to pot of simmering red sauce. Cook for at least 30 mins. My sons favorite food of all time!

It's great because I used up lots of baby oatmeal or rice cereal this way. I also replaced with breadcrumbs and shredded zucchini in as well and also have done it with turkey.

I love turkey meatballs! I just mix the turkey with diced onion, 2 or so eggs, panko, ground pepper and garlic powder, and saute them on the stovetop so the outsides brown.

EHHH gah my link didn't post. I usually make a double batch and freeze browned but not fully cooked meatballs in quart bags.

Just wanted to say thank you to everyone for the great recipes and ideas! They are a huge hit with lo (and the Italian wedding soup was great too :))

So here's what I ended up doing; I mostly followed the weelicious recipe, but baked it in the oven instead of in a skillet:
Ingredients:
some onion, finely diced
some yellow bell pepper, finely diced
1/2 pound ground turkey
1 egg yolk, beaten
1/3 cup baby oatmeal cereal
1/4 teaspoon dried basil and oregano
shake of garlic powder
1. Preheat oven to 400F
2. Put onions and pepper pieces in a small skillet with a tiny bit of olive oil and cook until soft and translucent
3. Combined onion and pepper with the rest of the ingredients.
4. Refrigerate for at least an hour (was supposed to allow the bread product (in this case oatmeal) to absorb the flavors?)
5. Make into tiny meatballs (about a teaspoon big) and put on a cookie sheet lined with foil that's been sprayed with a little bit of coconut or olive oil spray.
6. Bake 10 minutes. Make sure that they're fully cooked.
7. Enjoy or freeze!

I do peas instead of zucchini for no other reason than lo loves peas. The first time I made them for the same reason as you, but now they've become a regular part of our meal rotation. They're so yummy!
