I'm trying to figure out a breakfast option option Christmas that is vegan - I regularly cook vegan meals but rarely breakfast and I want to (hopefully) make it special. Anyone have any good recipes?

My daughter is allergic to dairy and egg, so we often eat vegan. Unfortunately all my vegan breakfast ideas are not very “special.” Strawberry pop tarts (the only flavor that doesn’t contain dairy!), cinnamon sugar toast. I just made vegan donuts using Pillsbury buttermilk biscuits (the original has dairy and buttermilk does not!), cut out a hole, shallow-fried it, then put on a glaze (2 cup confectioners sugar with 1/3c nondairy milk). It was delicious!

@Clementine12: I’m not vegan but I love coconut milk yogurt. With fresh berries and granola and maybe some candied nuts and/or the buttermilk biscuits that @ineebee mentioned that could be delicious. You can also scramble softer tofus like eggs and could do something more savory with that. If your family likes Mexican food there are lots of options that can be made vegan with minor replacements. Chilaquiles is one that pops out to me as vegan (with vegan or no cheese) a little more special and so yummy.

I’m vegetarian but often eat vegetarian. Tofu scramble can be delicious, and oatmeal/overnight oats can be a good option, or overnight chia pudding with coconut milk. Or bagels with hummus or tofu cream cheese
