We loved taking LO to the beach. Being at the beach lends itself to being relaxed, and I totally think LO picked up on it. It was a lot of fun!

I agree that beach vacations are probably the easiest! But really, I think anywhere that is a walkable city and where you want get a condo/apt style place to stay so you can have a separate area for baby and a kitchenette (I just think that would be helpful!). How about NYC? L and a can hang out!
