LO has quickly learned birthdays are fun and cake- filled. He loves the CF Celebration cake. Harry David ships it, pre-sliced for 10 for $90. I’d like to make it myself because a) it should be cheaper and b) I want to decorate the top of an unsliced cake.

The cake has layers of cake and mousse and cheesecake. It tastes like classic birthday cake and Neapolitan ice cream. I’ve made box cake with canned icing before and the icing layers come out super thin. How do I get the thick layers for the mousse. How do I prevent the weight of the top cake layer not smashing the mousse?
