I'm baking a bunch of cookies and cupcakes for a cakewalk at a Harvest carnival this Saturday. If I made stuff starting tomorrow but didn't frost them until Friday, so you think they'd be good? Of course, sealed in airtight containers. I'm just thinking that if I wait and do all of the baking on Friday and decorating, I'll go nuts, especially with a 9 1/2 month old to entertain. And Wednesday I'm out of the house all day.

I'd freeze them once they're cooled to ensure freshness for Saturday. I'd bake Tuesady, freeze them and then pull them out Thursday night so they're ready for decorations Friday morning. I think 5 days is a long time for cupcakes.
Edit - I think cookies would be fine either way.

You can also wrap everything well/put in airtight containers and freeze it. Just pull everything out a few hours before you want to decorate or serve.
I did this for a bridal shower and everything turned out perfectly.

I'm going to disagree with everyone else... Cookies loose their freshness within a few days (even if well wrapped). I'd suggest making the cookie dough early, then freezing it in balls so you can easily bake and frost on Friday. For cupcakes, you can bake the cake and freeze, then defrost and frost on Friday.

@Mrs.Someone: Ah that's a really good idea! Although, it may depend on the type of cookie. I would probably try and bake the cookies as close as possible to the carnival (day before, ideally).

@pui: Yep, a cookie would less overall moisture has less to lose. So a shortbread-like cookie would be totally fine to cook early, but a yummy butter filled chocolate chip wouldn't be as good.
And in the interest of being honest, I keep balls of cookie dough in my freezer for when I need just 1 or 2 chocolate chip cookies

@Mrs.Someone: agreed as to cookies. I've also frozen a log of cookie dough and sliced off the cookies onto the baking sheet.
