I have no splat mat specific recs (except maybe that stuff you put under rolling desk chairs? Is that stuff even still around?) but I would pick up a bib with a catch-all on the bottom. Cuts down on the mess (esp solids) for sure!

@sera_87: and yeah we have a rolling chair one in our office so they are still around but was $100 so looking to spend less.

You could get a basic picnic blanket. The old-school gingham style are pretty cheap and usually machine washable.
