My DH's Uncle had a bumper crop of butternut squash and gave us 3 gourds. I've rarely cooked with the squash. Is there any great recipes you'd recommend?

I just saw this one on Whole Foods website and am intrigued. I'd like to make it as a side dish soon.

Just dice it up into cubes, toss with olive oil and a touch of salt, and roast on a pan (it's easier if it's a nonstick pan and/or lined with foil) at 350 til it's cooked through and/or ideally slightly browned/crisp on the outside. Tastes like candy!

Butternut squash lasagna. So yummy I don't miss the cheese or anything.

I've also made some great butternut squash risotto And butternut squash bisque is a big favorite in our house!

My mom makes a delicious curried butternut and apple soup.
I remember last year around this time better homes & gardens did an issue dedicated to butternut squash, you might check their website!
