The most memorable thing my husband and I did in Charleston was a food tour. We did one from this company but it looks like there are a lot to choose from - https://charlestonculinarytours.com/food-tours/ The food was delicious and we got a bit of history and sightseeing as well. I'd recommend going early on in your trip so you can see if there are restaurants you'd want to go back to.
