I only cook Korean food! I usually throw ingredients without measuring, but maangchi's got a lot of great recipes and they're easy!

@Andrea: LO doesn't eat very well yet! She likes japchae though. I can't wait til she starts eating better so I can cook more. Right now she likes cheese, fruit, bread, creamy pasta. Sometimes she'll eat egg.

We do a lot of Thai food. Massaman Curry is a favourite. We also cook stir fries every week. They are so quick, easy and healthy. We don't use recipes for stir fry, just throw whatever sauces/spices in that we feel like.

I agree with @chopsuey119, maangchi.com is great for Korean food! I also use many of the recipes from http://www.korean-cuisine.blogspot.com.

@Andrea: I cheat and use a store bought curry paste. The recipe I loosely follow is fairly similar to this one:

The evaporated milk you can use either that or just coconut milk.

I grew up cooking for the family so I don't really follow recipes. But the more traditional items are generally cooked by my mom. And we all know moms don't use recipes!! So I enjoyed being able to find blogs out there with authentic Chinese recipes.
I follow Steamy Kitchen and Christine's Recipe is a good one for cantonese cooking. I also follow Rasa Malaysia and a bunch more that I need to check my reader for.

Off topic: My friend (who's Dominican) just gave me a link to a Dominican food blog that he said is authentic so I'm interested to try some of those recipes out too!

I totally need to pick your brain on Pho!!! We have been making it off and on for the last year or so. We have gotten the broth pretty good and tasty. It's the not getting the soup murky with the raw beef that is throwing us off!!! We have worked around it but I just can't believe restaurants go to the extent we do. So there's gotta be a trick we are missing!

@regberadaisy: i have no tips. =( i have never even attempted my own broth! so you mean the broth gets all murky as you add the raw beef to cook, right before you eat it?

Yup, my broth is perfectly clear but it's the addition of the beef that makes it murky. I've started rinsing the beef after we slice it and squeezing the water out. It does the trick but I gotta think there's a easier way!

@regberadaisy: Not sure if you are describing the same thing but my mom likes to pre-cook the raw meat in a broth that is in a separate pot. That usually reduces on the murky-ness.

i mostly make korean food and ask my mom how to make something. i make lots of soups - chicken/beef porridge, seaweed soup, turnip soup, fish cake soup, miso soup, rice cake soup, dumpling soup....
most korean dishes are spicy, so i think i just tend to make veggies/meats taste asian by using a lot of garlic, soy sauce, and sesame oil.
we eat a lot of rice, and then add a meat (chicken, steak, fish, egg, or SPAM), and a veggie (mushrooms, zucchini, broccoli or cauliflower sauteed in soy sauce, sesame, garlic). mr bee likes ginger so i use a lot of ginger for the things he eats.
