I am baking another smash cake for R tonight (1 year photos on Sat morning). I was going to make the icing and ice tomorrow. The cake batter makes enough so I was going to make cupcakes and bring them to work. But will they still be fresh Monday?? I don't think that I have time to bake, let them cool and ice tonight for tomorrow. I have a cake tupperware container I can store them in all weekend.

Personally I'd probably freeze them. Bake tonight, let cool, freeze tonight in a ziplock, and then thaw/ice Sunday night.

I usually throw them out after 3 days -I think if you made them tomorrow they would be ok on Monday!

@Smurfette: yea it should be fine. Unless you're flavoring it with some sort of fruit? I make a strawberry swiss merengue buttercream that discolors if it isn't eaten in 48 hrs. But just plain buttercream or swiss merengue buttercream without fruit is good for like a week in the fridge
