We have one. It's hard enough to keep one bag stocked up, I would have lots of trouble with two and not knowing what's in each bag or having to switch out. I have the 31 organizing utility tote. Love it- it has lots of outside pockets so you can find things in a hurry.
We do also sometimes just want to grab a couple of things and not take a heavy bag if we're walking around, so I'll just throw some things in any bag I have laying around in that case.

I have 3 "diaper" bags. One of them is a real diaper bag (Timi & Leslie). One is a messenger style bag and the other one is a backpack for my husband. Oh wait, I have a Tori Burch bag that I use too.
I find that I need a few different styles depending on where I'm going and what baby gear I need to take with me. If it's a quick trip where I just need the diapers/wipes and a few snacks, I'll take the Timi & Leslie bag because it's light and small. If I'm lugging around lunch gear (like spoons, cups, plates) and snacks and toys and clothes, I'll take the backpack so that my husband can wear it. If I'm not taking the stroller, I'll take the messenger bag so that I can drape it across my body and have my hands and shoulders free.

@Orvis18: I don't know what the Stevie looks like, but my bag is plenty big. I have 3 disposable diapers, wipes, all of my stuff, a change of clothes, bottle of water, sippy cup, snacks.. Lots of stuff fit!

we have 3. the skip hop versa, diaper dude messenger bag, a backpack, and i gave away a kate spade one i had as my first bag a long time ago. i probably use a diaper bag 2 times a month though. the messenger holds a LOT and is great for travel. the backpack i used to wear when we went out without a stroller. the skip hop versa i just got for our nanny because we needed a bag that hung off the stroller and the diaper dude was too big.
do you need more than one? no but your needs change and it's hard to know exactly what you'll need until you use it and you see whether you're a light packer/heavy packer, whether you walk/drive.... lots of factors to consider!

We have two. We have a Thirty-One Cindy Tote (in Quilted Gray Poppy) and a Vera Bradley diaper bag that I found for $20 and couldn't pass up! We could easily do with just one but I like them both.

It's big, it can be worn as a messenger or carried by handles, it's faux-leather to the look is extremely versatile and it's a bag I will still use beyond the baby years. @Orvis18: Mine is big enough for cloth diapers! That was a major factor for me too.

I have one, it actually a camera bag. It's the Ginger by Epiphanie http://epiphaniebags.com. It's super cute and holds a lot, and the divided areas are very handy. It's not so great for strollers though (I didn't use a stroller for the first year with my oldest, so I didn't care) so I'm planning on getting the Via messenger from Skip Hop.

I have two. A skip hop bento for serious outings and a cheap tote from target for brief adventures. I did soooo much research. Seems silly now. Haha

We have 3.
1) Graco diaper bag given to us from a friend. It works good for most outings
2) small purse that carries some diaper inserts, extra shell, wipes, 1 food pouch and 1 toy for quick trips.
3) new okkatots backpack diaper bag. We are transitioning into this from the Graco. I'm not sure I like it but my hubs wanted a backpack bag.
So far all have worked with cloth diapers just fine.

I have 3:
1. Skip Hop Versa- it is big but it gets stuffed to the max with cloth diapers, wet bag, etc
2. Skip Hop Duo- my husband's bag
3. Petunia Pickle Bottom Touring Tote- haven't used it yet but it looks similar in size to the Versa

@Hanasu: I've been wanting an epiphanie bag (or other similar camera bag) for a while! The Ginger is cute! Do you put a camera in it too with your baby stuff? If so, is it pretty bulky that way? Also, do you mean it doesn't hang on a stroller well?

I have one. It's the Vera Bradley diaper bag, and it's been great for us so far! I keep a ton of stuff in it, including cloth diapers, and a couple of extra disposables just in case.

@NYCaliMama: I empty it out if I'm going to use it as a camera bag (I shoot events for friends sometimes), I can fit an slr with room for diapers but no extra lenses.
It's to fat on the bottom to hang nicely off a stroller. I really love it though, and will enjoy using it as a cute camera bag. Maybe a different style by them would work better.

i have 2. a 'traditional' looking diaper bag and then a 'manly' one for DH that is much smaller that he feels more comfortable carrying around.

I have three. A small Vera Bradley messenger that I use for trips that don't involve a meal, a larger Skip Hop that I use for trips that involve a meal, a Mia Bossi that I rarely use, it was intended as my work/diaper bag, but I never returned to work, and it's heavy when empty.

I have two, but only use one. I first used a Columbia bag that I used from birth until 8.5 months but found that it was too narrow but just dealt with it. Finally, I got fed up and now I use a Skip Hop Madison, which I love so much more.

We have two:
1) thirty-one utility tote: this is our daycare bag. Which usually has two changes of clothes, three bibs and three bottles. Occassionally it needs to carry more to re-stock at daycare (diapers, formula, wipes, etc).
2) JuJeBe Be All: I love the looks of the bag, but it's on the small side of being functional. It holds what we need it to, but I have to dig to the bottom routinely. I spent too much money on it to ditch it and get something different.

I used a 31 organizing tote until about a year when we went on vacation and I switched to an LL Bean stowaway backpack because I didn't want the bag itself to weigh a lot (it weighs 11oz empty) but still wanted it to be functional.

We have 2 - one for each car basically. It works for us because we never have to remember to switch out if we decide to take DH's car instead.
